Origin of Nasi Dagang

The name "nasi dagang" itself indicates a connection with traders or merchants. The history of nasi dagang is said to begin as food produced for trade purposes because it is delicious, long-lasting, filling, and suitable for eating at any time. There is a theory that nasi dagang was originally a food prepared for traders who traveled long distances. 


The rice used is a mixture of white rice and glutinous rice, which can last longer and provide higher energy for long journeys. Once upon a time, nasi dagang was very famous in several areas such as southern Thailand (Narathiwat, Pattani, and Songkhla), Kelantan, and Terengganu.
 
There are various versions and stories about the history and origin of this commercial rice. Let's review the origin of commercial rice based on stories from Kelantan. According to stories from Kelantan, the origin of nasi dagang is linked to Puteri Saadong, who was the Queen of Kelantan between 1667 and 1671, and it is said that it was Puteri Saadong who created and produced nasi dagang.
 

Brief Story of Princess Saadong

Puteri Saadong, Datuk Loyor's daughter and Raja Sakti's granddaughter, was adopted as a child by Cik Siti Wan Kembang, the Queen of Kelantan. He then married his cousin, King Abdullah, the son of Sultan Samiruddin (King Jembal).

 

According to a story often told by elders, a King of Siam was captivated by the beauty of Princess Saadong and captured her to be taken to Siam with the intention of making her his wife. However, the King of Siam could not approach or touch Princess Saadong, and instead suffered from a mysterious skin disease that could not be cured for a long time.

 

Princess Saadong found out the secret behind the King of Siam's illness and offered to cure him on the condition that he would be sent back to Kelantan if successful. With God's permission, Princess Saadong's treatment successfully cured the King of Siam, who then fulfilled his promise to send Princess Saadong back to Kelantan.

Dishes To Traders

After recovering, Puteri Saadong was sent back to Kelantan by the King of Siam with a special entourage. When the group arrived in Kuala Kemasin, their food supplies, including rice, side dishes, and coconuts, were almost exhausted. In that anxious state, Princess Saadong used her wisdom by using the remaining ingredients to prepare a dish that was later called 'nasi dagang', according to their situation at that time. This story became a version of the origin of the famous nasi dagang in Kelantan, passed down from generation to generation.
 
Unlike the Kelantan version, the history of commercial rice in Terengganu is closely related to the lives of fishermen, the main occupation of Terengganu residents in the past. Terengganu commercial rice was created as an energy supply for fishermen when they are in the ocean, produced using coconut milk and fish sauce that gives them enough energy to survive.
 

In addition, Terengganu fishermen who live near the palace will present this commercial rice to the palace every Hari Raya Aidilfitri celebration. This became a symbolic tradition because nasi dagang was also a favorite dish of the royal family and was served at every event and celebration in Terengganu.

The Difference Between Nasi Dagang Between 2 National State

Nasi Dagang Preparation Ingredients

  • 2 pots of rice
  • 2 spoons of glutinous rice
  • Ginger (finely sliced)
  • Shallot (finely sliced)
  • 1/2 box of coconut milk
  • Salt and sugar
  • 2 tablespoons fenugreek
  • Aye fish / cob
  • 11 red onion cloves
  • 1 garlic clove
  • 1 inch ginger
  • 1 handful of dried chilies (boiled)
  • 1 small packet of fish curry spices
  • 1 small packet of rose flower goulash spice
  • 2 small boxes of coconut milk
  • Sufficient water
  • Sliced sour
  • Gula nisan / kerek / melaka
  • Salt
  • Red and green chilies
  • Cucumber
  • Radish
  • 2 red onions
  • 1 large pepper
  • 3 tablespoons of sugar
  • 1 teaspoon of salt
  • 3 tablespoons of vinegar

Ways of Preparing Commercial Rice

  1. Steam rice and glutinous rice until half cooked.
  2. Put the rice and half-cooked steamed rice in a large bowl. Set aside.
  3. In another bowl, add coconut milk, ginger, onion, fenugreek, sugar and salt. Stir well.
  4. Put it in the basin and mix well. Mix slowly to avoid broken rice.
  5. Steam again until cooked.

Place in a container lined with banana leaves, press a little to compress. Cover the rice with banana leaves and it's ready to serve

  1. Boil the fish until the fish is submerged with tamarind paste and salt.
  2. Boil until the water dries up a little on low heat.
  3. Grind red onion, garlic, ginger and dry chili.
  4. Heat a lot of oil and stir-fry the ground ingredients, spices, a little water with sugar. Saute until oil breaks and dry.
  5. Repeat this stir-fry 3 times and set aside.
  6. In another pot, add coconut milk and a little water. Then put the stir-fried ingredients in a pot filled with coconut milk. Open the fire and stir well.
  7. Add salt, tamarind paste, boiled fish and chili rice. Cook until the sauce thickens over low heat. Ready
  • Wash cucumbers and carrots
  • Remove the seeds and finely slice the cucumber and large pepper.
  • Finely slice carrots and onions.
  • Mix all ingredients together and ready to serve.
